Preparation and Ingredients


Combine 1kg of Classic Arana Silky Sponge Mix, 0.400kg of egg, and 0.400kg of water in a mixing bowl. Using a whisk, mix on slow speed for 1 minute, then scrape down the bowl. Whisk on high speed for 8 minutes until light and aerated, then whisk again on slow speed for 1 minute to stabilise the batter. Deposit into a paper-lined baking tin and bake as required: sponge rounds at approximately 190°C, Swiss rolls at approximately 220°C, or thick sheets at approximately 200°C, ensuring the product is baked through but still tender. Once baked, transfer immediately to a wire rack to cool.
